Eating establishments that offer a cuisine which features one or a variety of specialties from Denmark, Finland, Norway, Sweden and Iceland such as crispbread, rye wafers, biksemod (hash), dishes made with herring and other pickled fish, lutfisk (cod preserved with lye), late summer crayfish, meatballs, kol dalma (cabbage rolls), roast goose, biff Lindstrom (hamburger with onions, capers and beets) and smorrebrod (a selection of tea sandwiches).
